Behind the Recipe: Gulai Ayam (Indonesian Chicken Curry)


in my moms house, i made chicken curry almost every weeks. because we always bought chicken every sunday market. my late father really love my very first curry dishes, that is my first time made curry for him.. i still remember his expression when he praised my curry dishes.. He said “i love it, make it more often yes” but that is my first and last time i made curry for him, when i decide to leave my hometown for work and living.

a year..
two year…
three year passed..
and of course i am coming back home sometimes..
but in fourth year.. while im doing my best and hardwork here, and when i planned to back home, with all plan in mind, one of them is will cook curry for my father, its been while i never cooked for him..

November, month that i decide to get home..
May, he made a phone call and ask me “when will you get home?”.. and also i told him what would i do when i get there.. i’ll do medical check up for my mom and dad, because last time my father was collapse because of his heart, and promise to cooked delicious dish that ive learn here and make sure hes the first person try it.. and he seems very happy to heard that and also feel disappointed, i can feel it from his voice because he must wait for couple months..
and
June, He passed away..

Suddenly my world is gone.. i feel lost,  is that the way to make me get home early? i feel regret, imagine how happy he was when he knew that i would made curry for him again.. but its too late, and its already happen. i cant blame my self and too much mourning. then i realized that is the last phone call for me from him.. he know how to praise his daughter, and im really proud to be born as his daughter..

Enough for sad Story, Setelah sepeninggalan Ayah, aku jadi sering membuat Gulai ayam untuk keluargaku, terlebih lagi untuk adik laki-laki ku Rizky, dia anak paling bungsu kesayangan ayah, dan dia mempunyai potensi karena dia selalu meniru apa yang aku kerjakan, suka membantu memasak, membantu perkerjaan ku didepan komputer.. paling senang kalo diminta membantu menggambar dan mencari ide..

Bumbu Gulai ku harusnya selalu beli yang sudah jadi dipasar, tapi terakhir belakangan suka ragu kalo beli bumbu yang sudah jadi, meragukan apakah masih fresh dan tanpa pengawet?, akhirnya aku putusin untuk memracik bumbu sendiri.. terlebih lagi Rizky kurang doyan pedas, dan jelas cabe nya harus dikurangi bahkan di hilangkan..

Gulai Ayam dengan Bubur Nasi

Gulai Ayam (Mild)

“Just skip chilies when you hate spicy so much”

Bahan:
1 Ekor Ayam (Ukuran Max. 1 Kg), Potong 8 Bagian
2 Lembar Daun Salam
3 Lembar Daun Jeruk
2 Batang Serai, diGeprok Kasar
3 cm Lengkuas, diGeprok Kasar
500 ml Santan Kental (dari 1 Buah Butir Kelapa)
200 ml air (optional)
1/2 tsp Gula
1 sdm Minyak, untuk menumis

Bumbu Halus:
2 Buah Cabai Merah (versi Mild) atau Sesuai Selera
8 Siung Bawang Merah
4 Siung Bawang Putih
2 cm Jahe
2 Cm Kunyit
1 buah Kemiri
1/2 tsp Garam
1/2 tsp Merica

Methods:

Siapkan semua bahan, Bersihkan Ayam, Potong 10 Bagian.. Cuci bersih semua bumbu..

Lumuri ayam dengan sedikit air perasan jeruk nipis dan garam, Sisihkan

Haluskan Bumbu menggunakan Blender atau Ulekan hingga halus, b.. Lalu sisihkan

Panaskan Minyak di Kuali/Wajan, Tumis bumbu hingga Wangi.. kemudian Masukkan daun jeruk, salam, lengkuas, dan serai aduk kembali hingga wangi..

Masukkan Ayam ke wajan, di aduk hingga rata.. 1/4 Gelas Air lalu di aduk2 hingga ayam sedikit kaku.. dan air menyusut..

Kemudian masukkan santan sedikit demi sedikit, sambil di aduk-aduk hingga rata, habiskan santan lalu rebus ayam. jika santan terlalu kental bisa menambahkan 200ml air..

Sesekali ayam di aduk.. lalu diberi gula, tutup wajan menggunakan tutup kukusan dan masak 30 menit hingga ayam matang merata

Setelah matang, gulai ayam siap disantap.. Itadakimasu..

Porsi: 6 –  8 Orang

Gulai ayam cocok sekali disantap bersama nasi atau dengan bubur, juga dengan lalapan seperti mentimun, terung kecil, atau pucuk Katuk..

Tips:
* Menumis hanya dengan sedikit minyak, karena Gulai juga akan memproduksi minya dari santan dan lemak ayam
* Jika dikehendaki, buang lemak ayam, atau sisihkan kulit ayam untuk mengurangi lemak berlebih..
* Pastikan bumbu matang saat menumis, ini agar rasa dan aroma lebih kuat lebih bagus lagi kalo dibiarkan sedikit gosong :p
* Tanda kalo ayam sudah matang, Ayam menjadi Kaku, dan kuah santan sedikit menyusut..
* Tutup Wajan di pergunakan agar ayam cepat matang dan matang nya merata, serta menjaga aroma agar tidak terlalu cepat memuai
